The TCP/IP Guide(1.6K pages)–> pretty much everything to know about the TCP/IP protocol suite that runs modern networking. Its possible to go more in depth on specific protocols but for general coverage you cant beat this book. He gets down the bits and byte structure of packets and what each of em mean. Tough read but worth it.
networking books in general–>always helpful.
Go lookup O'Reilly, McGraw-Hill, and Syngress because they produce GREAT technical books, and I scour them monthly to find new books to read. They are my favorite triad for finding books on just about everything. O'Reilly covers just about everything. McGraw-Hill has the infamous Hacking Exposed series which will point you in the right direction of almost any attack/defence vector along with other interesting books, and Syngress has great security books and certification study guides..
